Ingredients
5 c. flour
2 c. sugar
1 c. orange juice (or sour cream)
2 tsp. baking powder
1 tsp. baking soda
¾ tsp. salt
2 Tbsp. vanilla
4 eggs
½ - 1 c. oil
7-10 apples
¾ - 1 c. sugar
2 c. raisins
2 Tbsp. cinnamon
Lemon Juice (optional)
2 Tbsp. sugar
1 Tbsp. cinnamon

Directions
Mix flour, 2 cups sugar, orange juice, baking powder, baking soda, salt, vanilla, eggs and oil. Pour ½ the batter into bottoms of 2 greased 9 x 13 inch pans; spread over bottoms of pans. Cut apples into slices (about 12 slices to each apple). If apples are sweet, add a few drops of lemon juice and use less sugar. Add raisins, 1 cup sugar and cinnamon and mix with apples. Arrange apple mixture over batter and cover with remaining batter. Oil top batter layer and sprinkle a mixture of 2 tablespoons sugar plus 1 tablespoon cinnamon on top. Bake at 350° for 40 to 50 minutes. Makes 2 cakes.
