Ingredients
¼ c. poppy seeds
3 ¼ c. flour
2 ½ tsp. baking powder
½ tsp. salt
3 eggs
¾ c. sugar
½ c. plus 2 Tbsp. oil
3 Tbsp. orange juice
1 tsp. vanilla
Directions
Stir the poppy seeds, flour, baking powder and salt together. Beat the eggs, sugar, oil, juice and vanilla together. Stir the flour mixture into the egg mixture. Knead a few times into a smooth dough. Chill ½ hour. Roll out small batches on a floured surface until very thin. Cut into 1 inch diamonds or holiday shapes. Lift with spatula and place on a greased cookie sheet. Bake at 375° for 7-8 minutes. Makes about 120 (1 ½ inch) cookies.
