Ingredients
⅔ c. margarine, softened
1 c. granulated sugar
2 large eggs
2 tsp. freshly squeezed lemon juice
1 tsp. grated lemon peel
3 ¼ c. all-purpose flour
½ tsp. baking powder
¼ tsp. salt

Frosting
1 c. confectioners sugar
2 Tbsp. freshly squeezed lemon juice
Green, blue orange or yellow food coloring

Directions
In a large bowl with an electric mixer at medium speed, beat margarine and sugar until fluffy. Add eggs; beat well; beat in 2 teaspoons lemon juice and lemon peel. In a medium bowl, combine flour, baking powder and salt. With mixer at low speed, gradually add flour to margarine mixture; beat only until blended. Refrigerate dough 1 hour. Preheat oven to 375°. On lightly floured surface, roll dough to ⅛ inch thickness. Using dreidel pattern of cookie cutter, cut out cookies. Bake 8-10 minutes until edges are lightly browned. Remove cookies to wire rack to cook.
Prepare frosting: Beat confectioners sugar and 2 tablespoons lemon juice until blended and smooth. If desired, color with food coloring. Spoon frosting into pastry bag fitted with writing tip. Pipe symbols over center of cookies - one symbol per cookie. Makes about 4 ½ dozen cookies.
