Ingredients
8 oz. dates, pitted
4 oz. ground coconut
2 Tbsp. bread crumbs
2 tsp. lemon juice
20 blanched whole almonds (about 1 oz.)
20 small paper cups

Directions
Grind the dates in a food chopper. If coconut is not ground fine enough, put in ½ of it at the same time. Put through 1 tablespoon bread crumbs to push down fruit. Put in a medium bowl. Add lemon juice and the remaining bread crumbs. Mix well until mixture forms a smooth "dough". Take 1 heaping tablespoon of the "dough"; shape between hands to a "finger" 2 inches long. Sprinkle the remaining 2 ounces coconut on a flat plate. Coat the date "fingers" with coconut. Place each on in a paper cup and tuck in an almond for garnish. Makes 20 "fingers".
