Ingredients
1 ½ lb. okra (or 2 (10 oz.) pkg. frozen okra)
¼ c. olive oil
1 large onion, chopped
2 cloves garlic, minced
¼ c. canned tomato paste
¼ c. chopped fresh coriander (or 2 tsp. dry cilantro leaves)
½ tsp. salt
¼ tsp. pepper
Fresh lemon wedges
Directions
Carefully peel top from okra, keeping pod intact. Rinse (or partially thaw frozen okra). For the sauce, heat oil and cook onion and garlic in it over medium heat. Stir and cook until onion is limp. Blend tomato paste with ¾ cup water. Add to onion with the coriander, salt and pepper. Add okra to sauce; cover and simmer until tender (about 15 to 20 minutes). Stir gently several times. Cool. Stir before serving with fresh lemon in wedges to squeeze over. Makes 4 to 6 servings.
