Ingredients
1 carrot
2 tomatoes
1 cucumber
2 pickles
2 radishes
2 green onions
Chopped parsley
2 Tbsp. olive oil
Juice of 1 lemon
1 tsp. salt
Dash of pepper

Directions
Wash well fresh vegetables; peel the ones that need peeling. Grate carrot; cut the other vegetables into small cubes. Put in a large salad bowl; sprinkle parsley on top. Pour oil over salad; toss. Add lemon juice and spices; toss again and serve.
