Ingredients
4 eggs
¾ c. sugar
1 c. honey
⅓ c. honey
⅓ c. salad oil
3 c. flour
½ tsp. salt
2 tsp. baking powder
1 tsp. baking soda
½ tsp. ground clove
½ tsp. ground allspice
3 tsp. instant coffee
1 c. hot water
Directions
Preheat oven to 325°. Grease lightly an 8 inch square pan. Prepare a strong cup of coffee. Let cool. Separate eggs. Put yolks in a big mixing bowl and the whites in a medium one. Beat yolks with sugar until creamy. Add oil and honey, beating after each addition until mixture is smooth. Sift flour and measure 3 cups. Combine with salt, baking soda, baking powder, and spices. Add dry ingredients to egg-honey mixture alternately with coffee, stirring with a spatula until all is blended. Do not overmix. Clean and dry beaters. Whip egg whites until stiff. Add one-third at a time to batter; fold in gently. Pour into pan and bake 80-90 minutes or until a toothpick comes out dry when inserted. This cake keeps well - even improves with a little aging.
