Ingredients
2 lb. carrots
1 ¼ c. water
2 Tbsp. cornstarch
½ c. honey
Salt to taste
Ginger to taste

Directions
Peel and cut the carrots into 1 inch rounds. Combine with 1 cup of water. Cover and simmer until barely done (about 20 minutes). Dissolve the cornstarch in the remaining ¼ cup water. Add to the carrots along with the honey, salt and ginger. Stir over low heat until mixture thickens. Servs 6-8.
